April 15, 2008 Dear Managers: The Randolph County Health Department will be offering the National Registry “Essentials of Food Safety and Sanitation” Course on May 19, 2008 from 8 am to 5:00 pm at the Health Department. As before, you have the opportunity to purchase the book, with the exam for $125.00 or if you own the book, take the exam for $75.00. These are the cost prices for the course. At the very least, one person per shift, per establishment must have this training. Anyone currently possessing a national certification program certificate obtained from another source must submit a copy of that certificate to the Health Department. You may send or FAX these to this office 263–0333. The course will be presented in a one-day review format. Books being purchased will be delivered three weeks prior to the course date, and must be paid for at that time. The review will cover food microbiology; foodborne illness; proper receiving and storage of food; food preparation; HACCP principals; pest control; and related topics. Students will be expected to read and study the Coursebook on their own, prior to attending the review course. Completion of this course is considered "demonstration of knowledge" as required by the Code. Because of the requirement, the Health Department will be offering this course quarterly. Other employees will still be required to take the regular food–handler's course offered the first Tuesday of each month. The exam will be given at approximately 3:30 p.m. Space will be available for up to 20 participants. In the event that English is not your native language, books and tests are available in Chinese and Spanish. These are a special order and must be purchased. Reservations for the class must be made at least 2 weeks prior to the exam to allow participants adequate time to read the coursebook. Fees are non-refundable after that date. Please use the attached reservation form to register. Should you wish, you can take other national certification courses from the National Environmental Health Association, the National Restaurant Association, or the Adult Education Program at Columbia Schools, who offer the ServSafe course.
